Creamed Spinach

Rustenburg – Fresh from the garden vegetables are delicious! Khunou La View Chesanyama & Vegetables owner Sello Khunou, a resident of Sunrisw View, grows his own vegetables that he then either serves at his Chesanyama or sells to the community.

One of his signature dishes is his creamed spinach. A delicious side dish with any meal.

Ingredients:

  • 500 grams baby spinach
  • 2 tablespoon butter
  • 1/2 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 100g cream cheese
  • Kosher salt 
  • Freshly ground black pepper 
  • Pinch cayenne pepper
  • 1/4 cup freshly grated Parmesan
  1. In large pot of boiling salted water, cook spinach for 30 seconds. Drain and place in a bowl of ice water. When cool enough to handle, drain, and squeeze out as much excess water as possible.
  2. Use a large frying pan to melt the butter at medium heat. 
  3. Add and onion and cook until soft this should take approximately 5 minutes. 
  4. Once the onion is soft add garlic and cook for 1 minute until fragrant.
  5. Add milk, heavy cream, and cream cheese to the pan. Simmer until cream cheese is melted. Season with salt, pepper, and a pinch of cayenne. 
  6. Add spinach and Parmesan and stir to combine.
